Period Old Fashioned Coconut Drops

These Coconut Drops are delicious and easy to make. A special treat to have for Valentine's Day.

One coconut grated; the whites of four eggs beaten to a stiff froth, one half pound sifted white sugar; flavor with rosewater or lemon; mix well. Have ready writing paper, well greased, with which to cover the bottom of baking pan. Drop the mixture in the pan in small heaps, leaving them one inch apart. Bake in a quick oven. When beginning to turn yellow, remove from the fire.

Macaroons haven't changed much, I'm thinking. Add a bit of salt, trade the flavoring to vanilla, and that's pretty much the recipe for "coconut kisses" out of one of my Betty Crocker Cookbooks! Hadn't thought of making them with lemon flavoring before, though. Sounds yummy!

We love coconut macaroons! They are chewy, they are juicy and they are satisfying. Great with a cup of coffee in mid afternoon!
