Here is another great dessert from "Old-Time Recipes To Enjoy", "The Kentucky Explorer Magazine."

Old-Fashioned Lemon Layer Cake

Three-quarters cup butter, two cups sugar, grated rind of one lemon, three large eggs, one-and-one-quarter cups sifted flour, four teaspoons baking powder, and three-quarters teaspoon salt. Cream butter, sugar and lemon rind together.

I LOVE lemon cake. I shouldn't admit this but, a local woman I know, who is very involved in a local church makes the some of the best lemon cake I've ever tried. I've been persuaded into attending several of their functions, knowing she was bringing one :laugh: All of the older ladies attending this church are quite the cooks/bakers. It's an easy sell, to get me to show up, when I know they're bringing food :cool:
 
A nice sauce to put over your cake.

Lemon Coconut Sauce

1/4 cup lemon juice
1 tablespoon corn starch
1 cup hot water
1/2 cup sugar
2 tablespoons brown sugar
1/3 cup coconut
salt

Combine sugar, salt and corn starch. Add water slowly stirring constantly. Cook over hot water, stirring constantly for 15 minutes. Add lemon juice and coconut.
 
I appreciate all things lemon now more than ever.
Guess it is because I have a citrus tree in my back yard and the lemons are falling of the branches because I can't use them fast enough!
