Merry Christmas from the Food and Recipes Forum. Thought add this old Mashed Potato Fudge Recipe. Fun to make and good too.

3 squares of unsweetened chocolate
4 tbsps. margarine
1/3 cup unseasoned mashed potato
1/8 tsp salt
1 tsp vanilla
1 1/2 lbs. powdered sugar

Melt together chocolate and margarine. and then add the rest of ingredients, Except the sugar. Stir until blended. Very slowly add the sugar. This mixture must be kneaded until shiny and not crumbly.
Pack mixture into buttered pan. Cut into squares and add walnut on each square.

Enjoy! Have a Blessed Christmas.

Interesting. Never heard of this. Does the mashed potato improve the recipe or is this a recipe left over from harder times when substitutes were made to stretch things out ? Have a Blessed Christmas as well. Always enjoy your posts.

Maine produces a wonderful candy called Needhams which are also made with mashed potatoes. They are individual pieces that are coated with chocolate but the ingredients are pretty much the same as in the fudge (tho Needhams also call for coconut).
