Mary Latina Kirkman of Nashville married Richard Keith Call who was appointed by Andrew Jackson the 3rd. Territorial Governor of Florida .while he was in Florida he built two platations in the Tallahassee area,by 1860 he was the 3rd largest slave owner in Leon County.this is his wife's recipe which I got from The Museum of Natural History at the University of Florida.
1 cup salad oil
1 cup cider vinegar
2/3 cup water
1/3 cup fresh lemon juice
2 bay leaves
1 tbs sugar
1 tsp salt
1/2 tsp cracked black pepper
1/2 tsp dill seeds
1/2 tsp dry mustard
1/4 tsp crushed,dried tarragon
1/4 tsp celery seeds
pinch cayenne pepper
2lbs. Medium sized,cleaned,raw shrimp
1 small ear sweet onion,cut in thin rings
In a 2-qt. Saucepan combine all ingredients except the shrimp and onion rings.bring to a boil,cover,and simmer for 10mins.
Add the shrimp to the liquid and when it returns to a gentle simmer,let them cook briefly,at no more than simmering,for about a minute.Remove shrimp with slotted spoon;let cool.Let the liquid cool to warm.
In a wide mouthed,1qt. Jar with a screw top,layer the shrimp and the onion rings;cover each layer with a little of the liquid.Be sure the final layer is well-covered.Cover the jar tightly and refrigerate for at least 48hrs before sampling.Shrimp may be stored 3 weeks in snuggly covered.serve onion rings as a garnish for the shrimp.
