According to the calendar, Spring has arrived. Unfortunately, the weather is not cooperating in my area. It is a cold and damp rainy day.

But do look forward to Spring. Time to think about planting gardens and Spring time vegetables and fruits.

They say it is artichoke weather, asparagus weather and radishes, to name a few. It also time to think about some tasty Spring dishes to make.

A delicious Asparagus Macedoine Salad for Spring

2 cups cooked asparagus
6 peeled and sliced radishes
4 scallions, sliced
4 tablespoons chopped watercress
1/4 cup French dressing
lettuce
green pepper
mayonnaise
18 cooked asparagus tips

Mix together cooked asparagus, radishes, scallions and watercress. Moisten with French dressing. Arrange nests of lettuce leaves on individual salad plates and heap with the vegetable mixture. Cap the mound of salad with rings of green pepper and add a tablespoon of mayonnaise and place upstanding 3 asparagus tips. Serves 6.

That salad sounds wonderful! Unfortunately there's no watercress at local markets. The only time I've eaten it (as a child) it was growing in the irrigation ditch. Well, there's always kale!

Yup, central and southern California is due to get a pretty big weather event today thru Thursday! The Farmer are grateful as long as there is no hail. Southern California will have to watch for mudslides in the burn areas.

There were beautiful asparaguses at the Farmers Market last weekend! Three to Four dollar for a large bunch. Lots of root vegetables and greens and citrus is still bountiful! Cherry trees are blossoming now and strawberries are what I'm looking forward to next!
