Rice Pudding has always been one of my favorites. This recipe is from "Confederate Home Cooking" by Patricia B. Mitchell.
Low Country Rice Pudding
1 1/4 cup milk
2 1/2 cups cooked brown rice
2 tablespoons honey
dash salt
1/4 teaspoon nutmeg
2 teaspoons vanilla
1/2 cup raisins
Heat milk in a medium-sized saucepan. Add remaining ingredients, stirring well. Cook, covered, for 20 to 30 minutes, stirring occasionally. Spoon into an attractive serving bowl and chill.
