Have you ever heard of a ground-steak sandwich? It's served at drive-ins and cafés all around Mount Airy, NC. Ground steak, sometimes called ground meat, is basically ground beef thickened with flour and water. In sandwich form, it's served on a toasted, buttered bun and topped with coleslaw, tomato, chopped onion and mayonnaise or mustard (most likely mayonnaise). It's like a sloppy joe, but without the ketchup.

A ground-steak sandwich is similar to the chili that comes in a NC chili dog. The texture is soft and the flavor is simple, almost sweet, with just a little thickness from the flour. It fits into the tradition of making things stretch that likely dates back to the Great Depression. The recipe is pretty simple. You just boil the meat, drain the grease, and add salt, pepper, flour, and water.

A ground-steak sandwich is a fairly cheap and tasty NC treat. You can typically get one for less than $3. If you ever visit Mt. Airy, NC, give one a try!

Eleanor. Thanks for posting this absolutely delicious looking recipe. I have never had such a sandwich but it certainly is an excuse for travelling down your way sometime. I must say that you folks in the South have an enormous amount and array of good foods and food products to choose from and consume. Someday I will have to take the time and travel throughout the South and enjoy all of these wonderful foods. David.
