This is an old time way to prepare poached eggs. This recipe from "The Kentucky Explorer Magazine", "Old Time Recipes To Enjoy", July-August, 2016.

French Poached Eggs

Put three pints of boiling water, one tablespoon of vinegar and one half tablespoon of salt.

Poached eggs is something I lack the courage to make. I tried once and created an awful mess (probably because I did not add vineagar to the water). That was about 30 years ago. Since then, I never tried to make poached eggs again. That's a pity, because my significant other loves Eggs Benedict for breakfast. So he always orders them when on vacation.
 
Goodness, I haven't had a poached egg in forever, I do enjoy them though. Next time I'm in the mood for eggs I'll have to make some.

I have heard that salt should be left out of the cooking process it does something to the egg white , the vinegar is a must.
