Fig cake is basically a fruit-based variant of the old English spice cakes that were very popular in the 19th century. This cake is a favorite along the North Carolina coast.

Ingredients:
1½ cups sugar
3 eggs
1 cup oil
1 teaspoon vanilla
½ cup buttermilk
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon allspice
1 cup fig preserves
1 cup nuts, preferably pecans or walnuts, finely chopped
½ cup whiskey

Instructions:
Preheat oven to 325°F. Grease and flour a 10-inch tube pan. In a large bowl, cream together sugar, eggs, and oil. Stir in vanilla. In a small bowl, sift together the flour, salt, soda, and spices. Alternately add dry ingredients with buttermilk to egg mixture, mixing well. Beat in fig preserves, nuts, and whiskey. Pour into the prepared pan, and bake for about one hour. Cool on a rack, then remove from pan. Serve warm.

Eleanor did you have trouble posting this thread? Besides myself others can't seem to get new threads to post here. I wish I knew what was going on.

Thanks.
Not trouble, but I did get a strange message saying the post might be checked by the moderators before it was shared. The message made it seem like I was suspected of making inappropriate posts or something. I had to say I wanted to proceed with sharing the thread so I did. I got the same message when I posted the white almond cake recipe on August 1. :frown:

I am aware that a reply to this thread may be reviewed by the staff, but I still want to make a reply.

That one I get too. It just happens in Food Forum. I have written on Staff Thread but no one has gotten Back. We have a new member who has tried to post new recipe and not allowed. I just don't understand why this keeps happening. Whoever is doing this is discouraging posts for foods. I wish they would get to the bottom of this.
