Today is National Chocolate Mint Day. What a temptation with this only the 2nd day of Lent for all who have given up sweets.

One of my favorites is Thin Mint Girl Scout Cookies. They were first sold in 1953 and represent 25% of the cookies sold by the Girl Scouts. They are so good.

Other favorite candies with chocolate mint are Andes Chocolate Mints, Hershey's York Peppermint Patties and Junior Mints.

Junior Mints were always a candy my Granny and I bought at the movie theater. We loved them and malted milk balls.
 
On the National Day Calendar they have a recipe for mint frosting for a chocolate cake, sounds very rich but tempting might be good on a red velvet cake minus the green food coloring!

Mint Frosting for Chocolate Cake

1 package cream cheese (8 0z), softened
1/4 cup butter or margarine, softened
3-1/2 cups powdered sugar
1 teaspoon mint extract
Green food coloring

In a large bowl, beat cream cheese and butter on medium speed until light and fluffy. On low speed, beat in mint extract, 2 to 3 drops of green food coloring and 3-1/2 cups powdered sugar until mixed. Beat on medium speed until fluffy. Store frosted cake in refrigerator.

You have to use butter,not the other stuff.when you do it that way it is more like a french butter cream but the cream cheese just takes up a notch even more.this will be really good just from my own expieroence.must refrigerate it it will turn on you very quick.this is a winner.
