Favorite Appetizers or Snacks

I thought be interesting to post favorite appetizers and snacks.

My husband loves Triscuits. He likes them plain or with different things on top.

A great topping for Triscuits:

Marinated Cheese Topper

1/2 cup olive oil
2 tablespoons chopped fresh parsley
1 teaspoon zest and 1 tablespoon juice from 1 lemon
12 1 inch fresh mozzarella cheese balls
24 triscuit fire roasted tomato and olive oil crackers
1/2 cup mixed roasted red and yellow pepper strips

Mix oil, parsley, lemon zest and juice. Pour over cheese. Toss to coat.

Refrigerate 1 hour.

Cut each cheese ball into 4 slices. Top crackers with peppers and cheese.

Makes 12 servings or 2 topped crackers for each person. A great appetizer for party or just serve to your spouse and yourself as a great evening snack.
 
My wife makes a great appetizer which is a twist on jalapeño poppers.she takes a jalapeño and cuts the top off and the cleans out the insides.she then tales a shrimp (41-60 size) and puts it all the way in and fills up the remaining space with cream cheese.she then dips them in a batter made with beer or ginger ale and deep fries them until golden brown.for those that worry about the heat from the pepper. Know that the cream cheese mellows the popper out.
 
I'm always ready to make up a couple roasting pans of Chex mix! Love the traditional but they have whole pages of variations. It's always great to have it on hand. Here's one from the Pillsbury site:

Kentucky Bourbon Bacon Chex Mix®
  • 20|min prep time
  • 1|hr|45|min total time
  • 20 servings

  • 1 bag (15 oz) Chex Mix® traditional snack mix

  • 1 cup pecan halves

  • 1/2 lb bacon (6 to 8 slices), crisply cooked and crumbled

  • 1/2 cup packed brown sugar

  • 1/2 cup butter

  • 1/4 cup light corn syrup

  • 2 tablespoons bourbon

  • 3/4 teaspoon chipotle chili powder

Directions
  1. Heat oven to 300°F. Line two 15x10x1-inch pans with foil. Spray foil with cooking spray. In large bowl, mix snack mix, pecans and bacon. Set aside.
  2. In 2-quart saucepan, heat brown sugar, butter and corn syrup over medium heat, stirring occasionally, until bubbly around edges. Cook 5 minutes, stirring occasionally; remove from heat. Cool 2 minutes. Carefully stir in bourbon and chipotle chili powder. Pour over snack mixture; toss until evenly coated.
  3. Spread snack mixture on pans. Bake 15 minutes, stirring every 5 minutes, to caramelize mixture. Cool completely, about 1 hour. Break into pieces. Store covered in refrigerator.

With a little bit of bourbon it sounds great but when you add bacon AWESOME.
 
Taking it in a bit of a different direction- I looove stuffed mushrooms as far as appetizers go!

Ingredients
  • 1/2 cup Italian-style drDirections bread crumbs
  • 1/2 cup grated Pecorino Romano
  • 2 garlic cloves, peeled and minced
  • 2 tablespoons chopped freshItalian parsley leaves
  • 1 tablespoon chopped fresh mint leaves
  • Salt and freshly ground black pepper
  • 1/3 cup extra-virgin olive oil
  • 28 large (2 1/2-inch-diameter)white mushrooms, stemmedWatch how to make this recipe
    Preheat the oven to 400 degrees F.

    Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.

    Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.

I generally do spiced roasted pecans and eggplant caviar dip with pita bread, which I think I have already posted. But Hanna's recipe reminded me of another recipe. I think I got this off a Kraft dressing bottle. It's super easy and makes a nice appetizer when grilling out.

Blue cheese mushroom grilled burritos:
Bottled Kraft ranch dressing
Blue cheese
Sliced button mushrooms
Flour tortillas
Olive oil
Toothpicks soaked in water

Mix together dressing and blue cheese to make a sort of paste. Fold in mushrooms. Stuff tortillas loosely with the mixture, fold like a flat burrito and pin with a soaked toothpick. Brush the outsides with olive oil and grill five minutes per side.
 
A great nut snack, Rosemary Cashews.

1 pound cashews
2 tablespoons minced fresh rosemary
1/2 teaspoon cayenne pepper
2teaspoons light brown sugar
1 tablespoon kosher salt
1 tablespoon unsalted butter, melted

Preheat oven to 350 degrees. Roast nuts for 5 minutes.
Combine rosemary, cayenne pepper, brown sugar and salt with melted butter. Pour over cashews and stir to combine.

Stuffed Dates with Bacon

1 box pitted whole dates
1 (8 oz) package of cream cheese, softened
1 lb bacon

Cut bacon into thirds. (each strip) Stuff dates with cream cheese and wrap with bacon. Insert toothpick to hold together. Broil until bacon is done. Serve warm,

Bacon lovers give this a try.
 
Another appetizer for those who like nuts.

Cashew Chicken Balls

1/2 cup finely diced chicken
1/2 cup finely chopped medium onion
1/8 lb softened sharp cheddar cheese
1 tsp. salt
1/4 tsp. pepper
2 tablespoons dry sherry
1/2 cup finely chopped cashews

Combine all the ingredients except the nuts. Use a teaspoonful for each ball. Roll in cashews. Chill. Makes 20 balls.
 
Another old standby is sausage balls. These are hot ones.

Hot Sausage Balls

1 lb hot sausage
1/2 cup milk
3 cups Bisquick
1 jar of Cheese Whiz

Mix thoroughly and roll into 1 inch balls. Using a cookie sheet with an edge on the side, bake mixture at 400 degrees for 15 to 20 minutes. They will rise in the pan. Can be frozen and cooked as needed.
