According to "McCormick. the spice company, there are 8 essential spices needed for Christmas. They are:

Allspice, Cinnamon, Clove, Ginger, Nutmeg, Sage, Vanilla, and Poultry Seasoning. They say these spices are the building blocks for all your meals and cooking for the holidays.

Gift Suggestion: "The Holiday Essential Kit". This gift pack features the eight essential spices. Add a set of stainless steel measuring spoons and cups. Also add a few recipes using these spices. Place in a basket and cover with saran wrap and tie with a holiday bow with some greens attached.

Makes the perfect gift for the bakers you know.

As for being a fan of clove,it's like Romney Dangerfield...it gets no respect.
 
I'm a huge fan of cloves too, @nitrofd . :) In fact, I was prowling the net a couple of years ago, looking for a clove-scented perfume. I have a Nag Champa one that is wonderful, but if given the option, I'd rather smell like a pumpkin pie than a yoga studio.
