For anyone who has a profusion of veggies in their garden, especially tomatoes and cucumbers, this WWII era recipe will be perfect for you. Plus, it sounds a though it would also look very lovely on a plate.
Ingredients -
Personally, I wouldn't scald and peel the tomatoes, I'd just give them a good cleaning and gut the inside. As to the lettuce nests, I'd use a bib lettuce, which looks more fancy. For dressing, I'd say you can use any creamy dressing that you enjoy. I'd even be tempted to sprinkle crumbled feta in with the cucumber mixture.

- 2 medium sized cucumbers
- salt & pepper
- lettuce
- 1 teaspoon chopped parsley
- mayonnaise or boiled salad dressing
