Cucumber Stuffed Tomato Salad

For anyone who has a profusion of veggies in their garden, especially tomatoes and cucumbers, this WWII era recipe will be perfect for you. Plus, it sounds a though it would also look very lovely on a plate.

Ingredients -
  • 6 ripe tomatoes
  • 2 medium sized cucumbers
  • salt & pepper
  • lettuce
  • 1 teaspoon chopped parsley
  • mayonnaise or boiled salad dressing
Directions- Scald and peel tomatoes; cut a slice from top of each and with a small spoon remove pulp and seeds. Peel, dice and moisten cucumber with dressing. Chill and use to fill tomatoes (also chilled and sprinkled with salt & pepper), put a little additional dressing on top and dust with the parsley. Serve in lettuce nests. Serves 6. Personally, I wouldn't scald and peel the tomatoes, I'd just give them a good cleaning and gut the inside. As to the lettuce nests, I'd use a bib lettuce, which looks more fancy. For dressing, I'd say you can use any creamy dressing that you enjoy. I'd even be tempted to sprinkle crumbled feta in with the cucumber mixture.
