A clafouti is a custardlike pancake studded with fruit. This Cranberry one gave this traditional French country-style dessert a New World twist.
3 eggs
2/3 cups flour
1/2 cup sugar
1/2 cup milk
1/2 cup heavy cream
1 tablespoon bourbon
1 teaspoon vanilla extract
dash salt
2 cups fresh cranberries
grated zest of 1 orange
powdered sugar
Preheat oven to 350 degrees. Grease a 9 inch glass pie plate.
Mix or whisk eggs with flour, sugar. milk.cream.borbon, vanilla and salt. Mix until well blended. Spread cranberries and orange zest evenly over bottom of pie plate. Carefully pour batter over fruit.
Bake until custard has just set in the center, about 50 minutes. Let cool to lukewarm, sprinkle liberally with powdered sugar and cut into wedges.
Serve warm.
