With this being Bacon Lovers' Day, I am posting this recipe, Confederates on Horseback. Know have mentioned it before in another thread. The recipe was found in a Natchez Cookbook of 1873 and had written in the margin "It got us through the War". I presume they meant the Civil War based on the date of cookbook.

It is the perfect snack or appetizer for this day or any day.

Confederates on Horseback

small rounds of bread
butter
drained oysters
thin slice of bacon spread with anchovy paste (could use horseradish)
toothpicks

Toast bread to light brown and butter lightly. Wrap oysters in bacon and secure with a toothpick. Bake at 400 degrees about 5 minutes or until bacon is crisp. Drain well and remove the toothpick. Serve on toast.

Everything is better with bacon! :wink: I've never had an oyster, not a huge fan of seafood since I'm allergic to shellfish, but that recipe does sound tempting!

There's a beautiful Oyster Bar in NYC's Grand Central Station. It's tucked away in a far off corner.
That is really a famous place with some great history.
