I just discovered the Civil War era cookbook entitled Confederate Home Cooking by Patricia B. Mitchell. Some of the recipes are familiar to me, but others were clearly made for war time. I think this cookbook would be especially interesting for reenactors. It features an outstanding collection of camp recipes that are easy to do at home as well as in the field. I'm thinking of you @captaindrew!

I think the recipe for Carolina Red Rice offers an assortment of flavors so very American that it will appeal to both our CWT Confederates and Yankees. Hope everyone enjoys!

Carolina Red Rice

Ingredients:
1/2 lb bacon
2 cups cooked brown rice
1 large can whole peeled tomatoes
1 tbsp olive oil/butter
1 white onion
Tabasco sauce
Salt & pepper

Directions:
Cook your rice, set aside.

Cook bacon in a skillet. Remove the bacon and crumble.

Dice onions and cook in bacon fat. When they are tender, add tomatoes, rice, bacon, and spices.

Break apart the tomatoes with a spoon and cook 30-35 minutes.

Ellie. Another fantastic and delicious looking recipe that I will have to try at some point this year. This seems to be one of those recipes were by any meats or vegetables, other than those listed in the actual recipe, can be added as additional ingredients. Thanks for sharing the recipe and the cookbook information. David.

My mother used to make something like this, but without bacon. It seems to me there were celery and carrots involved as well.

Made this and everyone liked it. Think I'll use stewed or chopped tomatoes next time, though, because breaking up the tomatoes seems to have kicked up my carpal tunnel syndrome!
