Chocolate Potato Cake

This cake may be more to your liking. It has chocolate which always gets my attention.

Chocolate Potato Cake

2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup raisins
1 cup mashed potatoes
1/2 cup melted chocolate (unsweetened)
1 cup chopped nuts
1/2 cup butter

Sift dry ingredients 3 times. Cream butter and sugar until fluffy. Add dry ingredients to creamed mixture. Alternate with milk. Add nuts and raisins after mixing in the mashed potatoes and melted chocolate. Blend well...bake in 2 buttered or lined 8 x 8 pans in 350 degree oven for about 35 minutes.

Sounds like carrot cake, with taters instead of carrots! I think I'd leave out the raisins though, just doesn't seem to fit, somehow.
