Charleston Okra Soup

Since January is Soup Month thought add this old recipe for Okra Soup. This soup was on the menu for many a Charleston cook during winter months. It was made by slaves and brought to the plantation cook.

1 large beef bone
2 medium onions, chopped
3 pounds okra, chopped fine
3 quarts water
1 piece bacon
8 large fresh tomatoes
salt
pepper
bay leaf

Cook meat in water slowly for two hours. Add onion, okra, bacon, tomatoes, bay leaf, salt and pepper. Let cook another two hours and add more water if needed. Add hot rice and serve buttered corn sticks as a tasty accompaniment.
