For many of us with cold weather, this Lobster soup would be a treat to make.

Lobster Soup

1 large lobster cut up
1 qt. milk
1 pint water

Boil together and then add a piece of butter size of egg. Thicken with large spoonful flour. Add salt. a shake of cayenne pepper and a glass of wine.

Strain before serving.

Note: Take out lobster before add flour. Then return lobster and cook a few more minutes.

Louisa Maccullock Cookbook dated July 4, 1868.

For the record lobster soup can refer to any soup made with lobster.

Lobster bisque on the other hand dates back to the 17th century in France. Give me a lobster bisque with a loaf of French bread.

I love lobster soup! I like broiled lobster tails as well.
