We have all heard of Welsh Rarebit and there are several recipes for it posted on the forum. However, I had never heard of Celery Rarebit. I found this recipe in old cookbook, "Modern Priscilla Cook Book" from the Priscilla Publishing Company, 1924. This cookbook was one of several given to me by an older friend who passed away many years ago. She knew I liked cookbooks and was going into Senior home and said I could have them. They are all treasures for me.

Celery Rarebit

2 tablespoons butter
2 tablespoons flour
11/2 cups milk
salt, pepper
Paprika
1 cup cheese
1 whole egg
1 egg yolk
1 cup diced celery

Make white sauce of first five ingredients, and when thoroughly cooked add cheese and beaten eggs. Stir well until blended. Add celery. Serve on crackers or toast.
 
This recipe is from "Modern Priscilla Cook Book", Special Subscription Edition, 1924, page 174. Since it is now 2016, don't think copyright law apply. According to post by Ami in 2015 books up to 1923 were protected. Since another year gone by feel this one be okay to post. If Ami feels it shouldn't be, please delete the post. Thanks.
 
"Modern Priscilla Magazine" was published from 1887 to 1930. It was a magazine published for women and was devoted to needlework and everyday housekeeping. It had recipes too. The Company published several cookbooks. The one I mention was sold to subscription holders.

You need to wait a year or more. 1923 is the year that copyrights from expired this year (2020). There was an article in Smithsonian magazine about it. Just looked it up. 1924 is now public domain (2020).
