Many of us like carrots. This old recipe for Carrot Salad is from my Granny. It is very tasty. She always grew carrots in her garden.

Carrot Salad

Scrape four large carrots, cut into slices and then shapes. Soak in cold water for one half an hour, then cook in boiling unsalted water until tender. Drain and dry. Line salad bowl with crisp lettuce leaves, arranging the carrots on top. Serve with dressing.

Dressing Recipe:

Rub sides and bottom of the bowl with clove garlic, add salt and pepper to taste and six tablespoons melted Crisco, add a piece of ice, and stir until salt is dissolved, then add one tablespoon vinegar or lemon juice. Beat until thick, using at once.

red bob is correct "It was a staple in Southern Cafeteria Dining." and still is/
But this is the best carrot salad I have ever eaten.


German Carrot Salad (Karottensalat)
  1. 2 lbs fresh carrots, peeled and grated.
  2. 1 bunch fresh dill, finely chopped.
  3. 1 cup orange juice.
  4. 1/4 cup vegetable oil.
  5. 1/3 cup white vinegar.
  6. 3 tablespoons honey.
  7. Salt to taste.
  8. Pepper to taste.
sometimes with a few chopped walnuts mixed in.

Try it the next time you eat in a German restaurant.
 
Donna. What an interesting carrot salad recipe with a very unique dressing. I have never heard of using and adding melted Crisco to ingredients in order to make a salad dressing. It all sounds very interesting to me. Is this dressing strictly a Southern invention? David.
 
My Granny used Crisco some. She also used lard or her own made butter.

As to whether Southern or not, don't know. She was born,raised and passed away in Ky. Many in her family used Crisco.

I must try that one. I love carrots raw or cooked and its a nice change from green salad. Ill have to shake up my salad repertoire as I'm in the habit of just having green leaves, olive oil & balsamic.
