Not fond of beets but the fired apples with Cabbage and the addition of bacon or spam sounds good

Mashed carrots sound like baby food my Mom made for me. She said you always needed carrots for good eyesight.

The fried apples sound delicious - I sauté cabbage, apples, and onions quite often. On the other hand the beets sound like my husband's personal nightmare. He hates pickles and olives and hiding them in a beet would be a very funny joke.
