Recreated Thomas Jefferson's Marinated Asparagus

Thomas Jefferson had huge gardens at Monticello. He loved vegetables. His personal favorite was asparagus.

This is recreated recipe for his Marinated Asparagus.

1 1/2 lb of asparagus
2 tablespoons red wine vinegar
1 teaspoon thyme
1 teaspoon parsley
1 hard boiled egg, diced
1/4 cup red onion

Heat asparagus in boiling water about 5 minutes until tender. Drain asparagus and put in cold water. Take asparagus from water and drain. Mix vinaigrette ingredients (vinegar and spices). Pour vinaigrette over the asparagus.. Top with egg.
 
Mary Randolph in her cookbook, The Virginia Housewife, has several asparagus recipes. I did post her asparagus soup. She also has one very similar to Jefferson's recipe. Her book was very popular.
