I have never developed a taste for salmon, which to me has a less desirable taste than most fish. The more you spice it up and disguise the taste, the better.
I agree that it takes to spice a lot better than non oily fish. Most fish is all about the simple fresh flavours but salmon needs a bit of help. I find it the most reliable fresh fish in the local supermarket, if I want anything special I have to go to the coast or to a fishmonger a half hour away. I'm not sure when they started to farm salmon but it's very big now on our west coast. The Norwegians are the big player for farming it now though they seemed to have the process dialled in. The Victorians seemed to perfect a lot of food production processes we use today , I must read up on it.
