Sponge cakes were very popular in 19th century. This one is a little different then others that have been posted.

"One pound pulverized sugar, half a pound of flour, 12 eggs, the juice and rind of one lemon;

Another excellent recipe! That must be a very large sponge cake!

And I concur, you'd want to bake it at maybe 325 as sponge is delicate type of cake, you don't want to bake it too hot, too quickly or else it'll dry out and become rubbery.
