It seems like right now we all want comfort foods! Welsh Rarebit is one of those simple, good dishes that takes little effort and tastes great.

WELSH RAREBIT. - Cut some old, rich cheese in very thin pieces, add to it a spoonful of cream. Place it over a slow fire, and let it stand until the cheese is entirely dissolved. Serve it with toast. Some like pepper and mustard.

That looks awesome, @ lugaglupa! I'm not up on cooking terms. What kind of cream are we talking about in the recipe?
 
Whenever I read about Rarebit I'm reminded of the 1096 movie 'Dream of a Rarebit Fiend' by film pioneer Edward S. Porter. A man eats rarebit and has hallucinations. 7 minutes of early camera tricks. This is one of those that you watch once and wonder why you did.
Why, you watch so you can bring it up in conversation and impress your friends!
