Vegetable Plum Pudding (Scotch)

Mix well together one pound of smoothly mashed potatoes, one half pound of carrots that hve been boiled until tender and beaten to a paste, one half pound of flour, one pound of currants, three quarters pound of brown sugar, one pound raisins, (full weight after stoning) two ounce suet, one nutmeg, one quarter teaspoonful of salt, one egg (to bind) When mixed put into a well floured cloth, tie up closely and boil for six hours. spices and sweetmeats may be added if desired. This pudding is very good eaten cold, and is considered more digestible than many others.
