Ingredients:

ripe pineapples​
powdered white sugar​
half a pint of boiling water to each pineapple​
ice​

Instructions:

This is a delightfully refreshing drink in warm weather, and is much used in the West Indies. Pare some ripe pineapples, cut them into thin slices, then cut each slice into small bits, put them into a large pitcher, and sprinkle powdered white sugar among them: pour on boiling water in proportion of half a pint of water to each pineapple; cover the pitcher, stop up the spout with a roll of soft paper, and let the pineapple infuse the water until it becomes quite cool, stirring and pressing down the pineapple occasionally with a spoon, to get out as much juice as possible. When the liquid has grown quite cold, set the pitcher for a while in ice. Then transfer the infusion to tumblers, add some more sugar, and put into each glass a lump of ice. You may lay a thin slice of fresh pineapple into each tumbler before you pour out the infusion.​

This recipe comes from the marvelously named "How to Do It: or, Directions for Knowing and Doing Everything Needful" by J. F. Tingley. It was published in 1864 and includes directions on a wide variety of topics, from food for the sickroom to courtship and marriage to making money. The titles for the sections are wonderful - the recipe above comes from the chapter "To Make Cheap and Wholesome Drinks for Warm Weather." The advice is truly amazing! The section "How to Treat a Wife" begins... "First, get a wife - secondly, be patient."
