The Thread below covered a good bit of what your asking. One of my favorite comments in the thread was by @Rhea Cole when he said, "Artillery batteries were traveling crafts fairs."
I recall reading in the Artillerists’ Companion that the wheels were dished so that dirt, mud, etc. would be thrown to the outside but, more importantly, wheel dishes essentially make the carriage wider and more stable/stronger without having to lengthen the axletree.
Don't forget the artificer units that were attached to military units. They included wheelwrights who could repair a broken wheel - or build one from scratch!
