It is stuffing here in NH. I made it was chopped up cranberries and mushrooms. Everyone thought it was delicious. I also love making it with oysters but we had one guest (out of nine) that specifically requested no oysters. That was sad but I didn't put any in.
Rice dressing has many options. Some only use beef, no pork combination. Others include chicken livers and gizzards. Some use the Holy Trinity of onions, bell peppers, and celery. One recipe I know of subs eggplant for the livers. Personally, I skip the livers, gizzards, pork, celery, and eggplant. There are dozens of recipes on the Internet. Just be sure the one you use is from South Louisiana. Lol

I am from Baltimore and I went into a Country Store in WV where my grandparents lived when I was a kid and asked if they had "soda" and the kind lady literally placed a box of Arm & Hammer baking soda on the counter. I said, "... oh, no, I mean like Coke.." and she smiled and said, "oh, you mean Pop..." (and they had all the good kinds of pop back then...)
Love all the responses! I have had the oyster stuffing. It is an acquired taste. Some of the Southern "Dressings" sound delicious. I do love cornbread. So, anything based on that would be something I'd enjoy.
In my family it is all "stuffing," in or outside the bird. We would just make up a big batch of the tasty sausage stuffing cause we love it. We pack the bird as much as we can and still cook whatever didn't fit in it on the side. The stuffing from in the bird was juicy and better then that cooked on the side, but it was still good. And with turkey gravy, fit to drink out of a cup, drizzled over the meat, the stuffing and the "mashies" - with all the fixings on the plate, it is all warm and comforting!
