Syrup Pie

While thumbing through my old UDC cookbook, I came across a recipe for Syrup Pie. Hmmmmmm...never heard of one and...wait, did I say a recipe? There were eleven of them! The ladies must have really liked them! All were variations of a theme. Most made with Alaga (cane) syrup. They must be incredible sweet! Looks like they are like a pecan pie without the pecans (and by the way I say, PE-CAN!) Enjoy!

Syrup Pie
3 eggs, separated
1/2 cup sugar
1 tablespoon molasses
1 heaping tablespoon butter2 1/2 tablespoons Alaga syrup
Process: Sift sugar with flour and mix with butter. Add yolks well beaten with syrup. Bake in pastry. Use whiles for meringue.


Old Fashion Syrup Pie
4 eggs, well beaten
1 cup sugar
1 Tablespoon flour
1 cup Alaga syrup
1 heaping teaspoon butter
(No further instruction for this one!)


Syrup Pie
4 eggs, separated
1 cup brown sugar
1 1/2 cups Alaga syrup
2 tablespoons butter
1 teaspoon cinnamon and allspice
1/2 teaspoon cloves
Process: Cream butter with sugar, add yolks well beaten and other ingredients in order given, Add last, stiffly beaten whiles. Bake in crust. Spices may be omitted, if preferred. Filling may be cooked in double boiler until thick and poured into previously bakes shell.
