Scotch cakes are delicious treats any time of year, but they were especially popular during the holidays in the 19th century. Expect this treat to be crumbly like shortbread. The crumbly texture comes from the butter.

Ingredients:
1 pound flour
1 teaspoon salt
3/4 pound butter
1/2 pound granulated sugar
1 teaspoon caraway seed

Directions:
Mix all the ingredients together the day before baking and chill. Roll with care so as not to make the dough too thin and cut into stars (or shapes of your choice) with a pastry cutter. Bake at 375 degrees until golden. When cool, cover with frosting.

Frosting Ingredients:
1 pound powdered sugar
2 egg whites
1 teaspoon vanilla

Frosting Preparation:
Beat egg whites, then add in sugar and vanilla. If the frosting gets too thick, add a little hot water.
