I saw a program on the tube dealing with the food culture of Houston,Texas first dealing with the Mexican POW's from the Mexican War settling the city,then the Czech's in the 1850's which formed the eastern end of the Czech Belt and finally after the Vietnam War the 200,000 that settled there.would you know of any history of this diverse immagration.

I only know a little, mostly from the early 20th Century through the Vietnam boat refugees.

Of course, the interaction of Mexican and Czech and German culture led to the Tejano conjunto and norteno music of the 20th Century:

 
Those musical fusions can be heard in this Library of Congress video on conjunto:


Now these musics have their origins about three decades after the Civil War and they started in southern Texas and northern Mexico.
