This older recipe is from "Old Time Recipes To Enjoy". The "Kentucky Explorer Magazine". It is delicious to serve for breakfast.

Puff Omelette

Beat the yellows of six eggs, pour in a cupful of sweet morning's milk, add a pinch of salt. Beat together each a tablespoonful of butter and flour until smooth, add to the eggs, and beat all together well; put into a frying pan that has been well greased, and when it begins to thicken, add six whites beaten to a stiff froth, and another pinch of salt. When stiff it is done.
IHOP used to make fluffy omelets years ago and now they just make them on a flat top.Huddle House still makes them the fluffy way and they are great.
