Recreated Poor Man's Soup

This is a classic recipe re-imagined with a bit of a kick using chilies in the standard Poor Man's Soup recipe. I've made it with ground turkey. It's excellent and healthy coupled with all the veggies.

Ingredients -
  • 1 to 1 1/2 lbs ground beef or ground turkey
  • 1 can diced tomatoes with green chilies (Rotel)
  • 16 oz. package frozen mixed vegetables
  • 6-8 potatoes peeled & diced
  • 1 small onion diced
  • 4 beef bouillon cubes
  • 7 cups water
  • salt & pepper to taste
  • garnish with fresh parsley
  1. Brown meat on stove & drain grease. Combine all ingredients, heat over low for about an hour. Add salt & pepper.
