This is a classic recipe re-imagined with a bit of a kick using chilies in the standard Poor Man's Soup recipe. I've made it with ground turkey. It's excellent and healthy coupled with all the veggies.

- 1 to 1 1/2 lbs ground beef or ground turkey
- 1 can diced tomatoes with green chilies (Rotel)
- 16 oz. package frozen mixed vegetables
- 6-8 potatoes peeled & diced
- 1 small onion diced
- 4 beef bouillon cubes
- 7 cups water
- salt & pepper to taste
- garnish with fresh parsley
- Brown meat on stove & drain grease. Combine all ingredients, heat over low for about an hour. Add salt & pepper.
