Crack and pick pecan nuts, separating form the shell nicely, chop the pecans very fine, and to ebery six tablespoons of chopped pecans add seven tablespoons of granulated sugar. Put your sugar inot a vessel and put on the fire; no water must be used. Stir the sugar constantly until it becomes a syrup, then immediately stir in the nuts, stirring, well, then take off the fire and pour on a marble slab; have your biscuit roller greased and roll out into a large thin cake, then with a knife mark off in blicks, and when it is cool it will easily break.
