Oyster Omelet
You will need:
12 oysters 3 lumps of butter
salt and pepper to taste 4 eggs
2 tblsp milk

1. Stew oysters in their own liquor.
2. Roll butter lumps (size of butternut) in flour, put in stew pot and let come to a boil Season with salt and pepper.
3. Take out oysters and chop them. Put oysters back and set on back part of stove.
4. Beat eggs and add milk.
5. Combine all mixtures and fry in a well-buttered frying pan.
6. When done, remove to hot platter and pour oyster sauce over them.
7. Serve hot.

I have seen pictures with the oyster omelet that has a unique sauce on top. Looks good. I like the omelet with sausage gravy on top but to each his/her own.
