Have always enjoyed opera creams. Found this old recipe for Opera Caramels from "Old Time Recipes To Enjoy, The Kentucky Explorer Magazine"

Opera Caramels

Two cups of sugar, one fourth cup of milk or cream, one teaspoon vanilla, and one fourth cup glucose. Boil sugar, glucose, and milk until it forms a soft ball when dropped in cold water.

Glucose is a syrup, often sourced from hydrolyzed corn and is often called corn syrup.

Glucose Syrup Recipe:

2 cups caster sugar
3/4 cup water
pinch of salt
1 teaspoon cream of tarter

Put ingredients inpan and let simmer until sugar dissolved. Turn to low heat and cover and simmer for 5 minutes. Pour into a jar and let cool. Cover and store for use.
