Does anyone make pork sausage from scratch any more? Does anyone have a old family recipe they would share? All the recipes I find online refer to buying sausage casings. When I helped my grandma make sausage back in the day, one of my jobs was to clean the hog intestines that were used as the casing. Let's just say they were washed a lot and then washed again.
Hog killing time was a very busy part of every fall and we used up everything but the squeal, as they liked to say. What filled the sausage was all the leftover bits of everything that wasn't used for something else. As unappealing as this may sound I assure you the sausage she made was absolutely delicious and was considered a great treat when we ate it.
Grandma never used a cookbook and didn't write down any of her recipes although she always narrated what she was doing when someone was helping her cook. The secret was in the spices she used, no doubt, but unfortunately I have no recollection what they were.
