Does anyone know where I can find reliable numbers on how many soldiers from each state fought
If you can get a hold of an authoritative published reference work, like 'Civil War High Commands' by Eicher and Eicher.

This reference work shows (@ pp. 47 to 52), the quota numbers and terms of enlistment per state, for enrollments in the Union Army. It also has a summary of aggregate numbers of forces furnished by each state in the Union Army and Navy (@ pp. 53-54).

Unfortunately, details of any corresponding actual Confederate enrollment numbers per state are reduced to unreliable and incomplete aggregate total estimates because the records were lost or destroyed during the war (@ pp. 70-71).
