Today, June 22, is National Chocolate Éclair Day. Éclair is the French word for lightning. Historians say the chocolate éclair got its name from the "flash" of frosting that glistens across the top of the éclair.

It has been a favorite treat since it was created in the 1860s. The French call the dough "choux" which is carefully baked to allow for a hollow interior. The cream or custard is piped into the center and it is topped off with fondant icing.

This dessert is a favorite world-wide. It is so delicious. Enjoy one today.
 
I have always loved Chocolate Eclairs and Cream Puffs. When I was in High School, my best friend and I would walk after school to Heitzman's Bakery in the Highlands area of Louisville, Ky. We would get a cream puff or a chocolate éclair as a treat. They were so good.

    ... by the way, there are several alternative names for Eclair in German, including Love Bone and Coffee Stick. :smile coffee:

    Interestingly, we Germans use whipped cream as filling as apparently you Americans do also. The French on the other hand use vanilla or chocolate pudding.

It does seem to be whipped cream, a little stiffer than you'd use on another dessert. The pudding appears to be reserved for bismarks. I must say, I try to find a bakery where they use REAL pudding and REAL whipped cream! :thumbsup:
 
French military name for the short and stretched version of the AS332 Super Puma helicopter is "Éclair and Tonnere" - Lightning and Thunder. Publix has a good version up the road where I will be stopping today.
