Jefferson Davis Muffins

There are recipes for Jefferson Davis pie and gingerbread on the forum. Just found this recipe for Jefferson Davis Muffins. These sound like some to try.

2 eggs
1 cup sour milk
one cup meal
1/2 cup flour
1 teaspoon salt
2 teaspoons baking powder
i tablespoon lard

Beat eggs, which been separated. To the yolks add salt, milk, melted lard, meal, flour and baking powder. Put in well beaten whites and bake in moderate over.

The meal means corn meal. You can use yellow or white corn meal.

is there any consistent spice or flavor in the things linked with Davis? Or do they just have his name?

Would buttermilk substitute for the sour milk ?

Some of recipes with Jefferson Davis name are suppose to be ones he liked and some his wife made. I am not sure about these muffins. Will look into it further. I know he loved the gingerbread that his wife made.

You could use buttermilk.
