This was a salad my aunt served. It was popular for a Church luncheon or tea party. It was an old recipe from her family.

Jean Lafitte Salad

One cup cold diced meat, six tablespoons cold diced cooked potatoes, six tablespoons cold diced carrots, six tablespoons cold cooked string beans, one half cup French dressing, two chopped sweet pickles, one hard cooked egg, chopped, one half cup mayonnaise. Mix the vegetables and the meats with the French dressing. Let it stand for one hour and then add pickles, egg and mayonnaise. Serve chilled on lettuce leaf.

Years ago, I was a member of a BBQ team that competed on both the "Memphis in May" and also the "Kansas City" national circuits.
The Memphis competitions would also have an "anything but" category. (Anything but BBQ).

"Catfish Jean Lafitte" was always our go to dish.

That category was only for fun and did not affect the overall points.
But we won 1st Place about eight out of ten times when we served it to the judges.

I've had slightly differing versions of this salad for as long as I can remember.

It is so good.
