What would the uniform and accoutrements be for the 2nd Ms, Co. K, Iuka Riflemen? Right now, I'm going with butternut shell jacket with "I" buttons

That is totally dependent on the specific time line you are portraying.
Most companies of the 2nd Mississippi headed to Virginia wearing red woolen shirts. After the Government Depot system began to function they would have drawn uniforms from their nearest depot, which would have generally been the Richmond Depot.
