Hummingbird cake

The Hummingbird cake first appeared in the pages of Southern Living magazine in 1978 and was submitted by Mrs. L.H. Wiggins of Greensboro, North Carolina. The cake is an award winner, good any time of the year but I always seem to start wanting to fix one around Easter. There is something about the summery combination of bananas and pineapples that just feels right for an after Sunday dinner dessert out on the front porch with a glsss of sweet tea. There are many new variations available online of the classic recipe, the one I use sticks pretty close to the original (hope that will still qualify it as authentic - there was just too dang much oil) and I'll post the link down below. Having trouble with my tablet thingie and the pics! I just made this, this morning, so it is a work in process!

Sounds good Ashley! I like the combination of bananas and pineapple too, reminds me of spring and summer. One for my every growing recipe folder.

Also wanted to mention that I think it's very cool you were named after Ashley Wilkes in "Gone With The Wind." It's a lovely name...
 
Honey butter cream cheese frosting
8 oz cream cheese, softened
8 oz unsalted butter, softened
4 cups confectioner's sugar
4 TBS honey

Cream butter and cream cheese with blender. Gradually add sugar one cup at a time. Add honey. Add one last cup of sugar and a TBS milk. Mix well. This makes a ton of frosting! Maybe enough for two! Make some extra cupcakes!

I've ben itching to bake it all week and today was just a beautiful day for baking! We're having Easter dinner with friends after church tomorrow and this will be perfect!

Make sure over is preheated and ready to go. Measure out your batter evenly!
I gots about 3 1/2 cups of batter in each pan. Dropped-banged them on the counter to even them out like my Nanny taught me and into the oven on the same rack.
I was actually surprised! Usually they are as wonky as my pinwheels!
