Wild Game Fried Squirrel

Ingredients:

squirrels​

salt​

pepper​

egg yolks​

grated cracker​

hot lard for frying​

Instructions:

Cut up and season with salt and pepper, and dip each piece in beaten yolk of egg and grated cracker, and fry in hot lard until nice and brown.​

Squirrel; first kill and clean, soak meat in warm water and salt about 2 hours. Next dip in eggs mixed with salt, pepper, whathisheresauce, and A-One, roll in bread crumbs and grill until done.
