Fortune cookies

While fortune cookies are largely associated with Chinese food in the United States, they most likely originated from cookies made by Japanese immigrants to the United States in the late 19th century. Fortune cookies before the early 20th century were all made by hand. Prior to World War II, fortune cookies were known as "fortune tea cakes."There are multi-cultural versions of fortune cookies. The Mexican version of the fortune cookie is called the "Lucky Taco." It is a red taco-shaped cookie with a fortune inside. There is also an Italian version called the "Lucky Canoli".
Homemade Fortune Cookies
Ingredients:
3 egg whites
3/4 cup white sugar
1/2 cup butter, melted and cooled
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup all-purpose flour
2 tablespoons water
Note: You can also roll these into tube-like cigar shapes and fill them with icing.
