Foraging season?

So civil war commands often supported themselves by foraging while on the march (foraging in the sense of supporting your column with food, not looting).

It's obviously easier to find food in the countryside in September than in March.

I don't think there is a simple answer to this, but about when did the best foraging season begin and end? Was there a significant difference between cavalry and infantry because of the horses?
