Today, Sept. 23 starts Fall for this calendar year. Thought we could post some of our favorite fall foods and their recipes.

I will start with Catherine Beecher's, sister of Harriet Beecher Stowe, recipe for Apple Pie. It is from her book, "Domestic Receipt Book" (1846).

"Pare your apples and cut them from the core. Line your dishes with paste, and put in the apple; cover and bake until the fruit is tender. Then take them from the oven, remove the upper crust, and put in sugar and nutmeg, cinnamon or rose water to your taste; a bit of sweet butter improves them. Also, to put in a little orange peel before they are baked, makes a pleasant variety. Common apple pies are very good to stew, sweeten, and flavor the apple before they are put into the oven. Many prefer the seasoning baked in. All apple pies are much nicer if the apple is grated and then seasoned."
 
Fall is certainly a time for comfort foods! Some of my favorites include, Apple Dumplings, Apple Pie, Apple Butter, anything apple, Vegetable Soup, Casseroles, Stews. Roasted Stuffed Turkey, Fresh Candied Yams, Meatloaf, Pot Pies and scores of other delights. I think the cooler weather is conducive to cooking than the hot summer-time, and all the fall crops provide a bounty of ingredients.
 
My wife likes to make in the fall a recipe she calls ranch style beans.in a large clay pot she put 3 large cans of pork and beans then adds about 2lbs of brown and crumbled chop meat, about a 1lb. Of cooked bacon, a whole bunch of molasses, and about 8oz. Dark brown sugar.she stirs it all up and puts it in a 450° oven for about three hours or until it gets a nice caramelized crust on top.serves it hot with nothing else.i could it eat until I burst.
 
It is the countdown to Fall for 2016. It starts Sept. 22. Will have to add some more Fall Favorite Foods. So four more days to go.

Love this time of year. So many wonderful colors, oranges, reds, and yellows. Have started to decorate the inside and outside of the house.
 
Ooh, fall is just about as good as spring for yummies! One of my favorites is plain roasted acorn squash. Mom used to put lots of butter, brown sugar, a little salt and pepper and some cinnamon. Very, very delicious!

Red Apple Salad

4 firm tart apples
1 1/2 cups sugar
1/4 teaspoon salt
1/2 cup red cinnamon candies
2 cups water
1/2 cup cottage cheese or 3 to 4 ounces cream cheese
1/4 cup chopped green pepper

Pare and cone apples.
Add sugar, salt and candies to the water. Put over heat and stir until candies are dissolved.
Cook apples slowly in this syrup in covered pot until just tender, turning occasionally to color evenly. Drain and chill.
Mix cheese with green pepper and stuff the apples.
Serve on watercress or other dark greens.

Makes 4 servings.
