Ebelskivers (sometimes spelled as aebleskivers) are small, puffed, round Danish pancake balls that can be filled with anything your heart desires – jam & chocolate chips being the usual favorites. Check out the recipe below.

Specialized Scandanavian cookware has a long and storied history. In the 1940s, a company called Nordic Ware opened in Minneapolis to serve the area's Scandinavian immigrants. Their original line was limited to the special tools used to make Scandinavia sweets—a krumkake iron to make decorative cookies, a rosette iron to stamp out deep-fried sweets and a platte panne pan to make perfect silver dollar pancakes. If you like ebelskivers, you may want to invest in a cast-iron ebelskiver pan. You can order one from Amazon for about $20.

Miss Ellie. Thanks for sharing this delicious looking recipe. They almost look like jelly filled or crème filled donuts although I think the batter consistency would be different. This batter would be lighter than donut batter therefore you could eat more of them instead of donuts. David.

It's new to me @Eleanor Rose and it looks tasty! Reminds me of a mini version of my Grandmother's Austrian donuts! Thanks for sharing this new treat with us! Love Nordic Ware bake ware. I own some of their Bundt pans and muffin tins! It's high quality stuff and made in America!
